Abstract.

The article presents comparative data of pomegranate of the Ashyk-anar cultivar growing in the South Kazakhstan region and Shah-Nar variety growing in Azerbaijan. Data of technical analysis of two grades of pomegranate and chemical analysis of freshly squeezed pomegranate juice are given. The amino acid composition of pomegranate juice, the content of acronutrients in freshly squeezed pomegranate juice and microelements in freshly squeezed pomegranate juice, as well as data on the content of polyphenolic substances
